Wash yam and bring to boil in salt water till soft. Drain and set aside
Preheat the oven at 200⁰
Prep peppers, onions and spring onions and season with salt, curry, thyme and set aside
Break eggs into a bowl, whisk add bouillon cube is using, curry and thyme and whisk again till all combined. If you choose, you can add cheese to the eggs at this point
Cut yam into thin slices or cubes and set aside
Place a frying pan/skillet on medium heat, add vegetable oil and heat for 2 minutes. Add diced plantain and fry till slightly brown.
Add the peppers, onions, spring onions and stir fry for about 3 minutes. Add sliced yam and continue to stir fry for another 3 minutes.
Pour whisked egg over stir fry, tilt frying pan to make sure egg is distributed evenly over the vegetables.
Cook on a low heat for about 2-3 mins for all the eggs to set at the edges of the pan. Sprinkle cheese on the top (if using)
10. Put the pan in the oven and bake on 200⁰ for about 10-20 minutes till egg is cooked and set
11. Cut into wedges, serve warm or cold with salad.
