Easy sausage rolls and it is homemade too!!! No party meal is complete here in the UK without a platter of warm or cold mini sausage rolls. It is a favourite party food and the kids love it too. I have made this recipe with just a few ingredients and store-bought puff pastry. It is a great appetizer and good for entertainment.

A little confession here, I rarely use pork mince for sausage rolls. I am more of a good quality sausage meat kinda girl when it comes to making these little beauties. Each time I make sausage roll, I customise it to taste, I add different spices and herbs and it has always been a hit back to back.
Mostly, I use homemade shortcrust pastry as I find it very easy to make and I prefer it to store-bought. Here in the UK, sausage rolls are made with puff pastry. I am not really a fan of it, but I love me some Greggs sausage roll. Blame it on my work colleague!!
Anyway, back to my easy sausage rolls, just as the name implies, this recipe is very easy and quick to make. More importantly, they freeze well too. With this recipe, you have no excuse to go to that next gathering without making these delicious appetizers. Yes, you can make them ahead of time and warm in the oven on the day of use. They are that easy!
What is in my easy sausage roll
Pork Sausages: I used pork sausages that has not been heavily spiced as I like my sausages to taste the way I want it. I achieve these flavours with my spice blends.
Store brought puff pastry: This made 12 mini sausage rolls and if you are looking to make a large one then I reckon you would get between 8 and 12 large ones.
Cajun seasoning: who doesn’t like a bit of Cajun spice? Better when it is homemade. If you don’t have Cajun seasoning, add any spice and herb of choice and customise to your taste. From fennel to paprika to thyme etc, There is no need to add salt to sausage rolls, remember the sausage meat already contains salt, if not too much as a matter of fact.
Black pepper: for kick, any other chilli would work too and that includes any hot sauce. Be careful if using hot sauce, don’t mix with your bare hands. Don’t start a war you can’t end with pepper!
1 small egg (beaten): to egg wash I use whisked egg to seal the edges and also on top of the cut-out sausage rolls for a shiny finish.
Breadcrumbs: this is optional, and I didn’t use it too. Breadcrumbs are used to prevent the fat in sausage meat from sipping out while baking. I would rather have the fat (oil) out if you know what I mean. I found a way out for that by baking my sausage rolls on a baking rack, that way the fat from the sausage sips out into the baking tray and my puff pastry still remain puffed and flaky.
How to make the best and delicious easy mini sausage rolls
If this is not one of the easiest appetizer recipes ever, then I don’t know what is.
- Start by removing the sausage meat from its casing and place in a bowl, add the rest of the ingredients except the egg. Mix thoroughly to combine. Remember, if you use hot sauce like tabasco or the like in making this recipe, do not mix with your bare hands. Wear gloves
- Roll out the puff pastry on a lightly floured worktop to make a large rectangle and cut it in the middle along the length. You will get two smaller rectangles.
- Take the mixed sausage meat and lay it on the edge of the rectangular pastry (the longest side). Tightly and carefully roll the pastry and sausage meat over, seal the edge (about 1cm) with egg wash. Trim off any excess, I doubt you would have any.
- Using a sharp knife, cut the log of rolled sausage in 6 pieces or to any size of choice. Repeat for the remaining rolled pastry
- Egg wash the top of the sausages and make a split on them. Finish it off with a sprinkle of poppy seed if using.
- Transfer to a lined baking tray or rack and bake in a preheated oven at 180⁰C/350F for 25 to 30 minutes or until golden brown and sausage cooked through. Remove it from the oven and leave them to cool before serving.
They can be served warm, cold or at room temperature with a sauce of choice. Ketchup or red sauce is a popular one here.
Tips
These sausage rolls can be frozen fresh or after baking. Store them in the freezer for up to 3 months.
Use any herb and spice of choice. Customise it to suit your taste.
If you are using cased sausage meat, there is no need to add salt.
If using real pork mincemeat, add breadcrumbs to act as a filler/binder and bake on a rack.
