Learn how to make your own garlic paste at home from scratch in simple steps. My cooking manta has always been, if in doubt add garlic, paprika and a pinch of salt. Trust me it works all the time, this cooking condiment will never let you down especially when it is used fresh in dishes.
You can use garlic paste in a variety of dishes like this garlic butter shrimp and especially Indian recipes which I indulge in from time to time.
What is garlic paste
In a simple layman’s term, garlic paste is simply peeled fresh garlic cloves pureed using a blender, food processor or even a sharp knife. The garlic is then stored in the fridge or freezer for later use or used immediately in recipes. This is also the same method you would use if you were to make ginger paste.
The only hard job making this paste or puree is the process of peeling garlics. You can obviously buy ready peeled ones but they do not taste anywhere fresh as peeling your own and using them up immediately.
One large garlic cloves should yield about a teaspoon of the paste/puree

Garlic
Olive oil
Salt to taste, this is optional
How to make garlic paste
Peel the garlic if you haven’t already. Press the garlic bulb with the back of your palm to break it up, then remove the outer paper. Use your fingers to separate the cloves and peel the paper off it
Add the garlic cloves to a blender/food processor, add a little oil and process until puree or paste like. You can also process it minced if that is how you like it. The whole process should take about 30 seconds to 1 minutes depending on the quantity you are making.
Season the garlic puree with salt (this is optional by the way especially if you would be storing this in the freezer)
Spoon the puree in a cleaned jar and store in the fridge for up to a week. (Do not store longer than this in the fridge to avoid botulism poisoning)
How to store
You can store in the fridge for up to a week in an airtight jar
Spoon the paste into an ice tray about a teaspoon into each cube and freeze. Transfer the frozen garlic puree into an airtight container or freezer bag and use within 3 months.
