I'm sorry I have been missing in action. To say I was feeling under the weather is an understatement. I have been down with the flu virus for over a month. lol Well I'm back now and better. Compliments of the season to you all, this Christmas season I planned to post super easy recipes that can complement our xmas turkey and chicken. Today I’ll be sharing a plantain recipe.
Pancake is one of the easiest things anyone can whisk up in the kitchen. It is not rocket science but I have met three people in my life that make the best pancake/ crepes ever... my Momma, Ronke and Peter. Permit me to say I grew up learning from the best.
The first time I heard about couscous was about 5 years ago during my national youth service. I spent a year in Kano, Dala to be precise and I can say categorically that couscous is one of the favourites of the northerners. How they cook it then I don’t know and I never had the chance to cook one as I thought it’s going to be a hassle cooking something so tiny and it just look complicated.
What better way to enjoy the pumpkin season other than cooking the pumpkin leaves or ugwu as it is popularly called in Nigeria. I love ugwu so much but what I love more is the way my mum cooks hers. I’ll never forget the way Naija women chop the vegetable, no trained chef can beat them to it.
I was feeling peckish the other day but to be honest I could have just drank water or ate a fruit, instead I went into the kitchen checked in the cupboard and bang I’m making a fudge. For this lovely soft melt in the mouth recipe, you will need 3 ingredients and 15 minutes cooking time.
Have you ever had one of those lazy mornings and thinking if only a prince charming could serve you breakfast in bed or vice versa. Well this is a quick brunch recipe for one of those days. This recipe is so quick and easy to make and can also serve as packed lunch for kids to school.
This recipe is all down to one of my colleagues at work. We share the same interest in food and photography. So this wonderful day, she started talking about sweet potato and how you can do so many things with it, not forgetting it is healthier than other potatoes. I love sweet potato but for some reason I hardly cook it.
I’ve always wanted to make my own chilli sauce for a long while now but I kept procrastinating. I went into my local store recently and it seems the whole shop was filled with nothing but sweet chilli sauce. The corner shop close to mine wasn’t left out either, they had it on sale. I told myself I am not buying it ever again.
If you want something really quick and easy to make, this meal is just right for you (that is if you love noodles and fish). it is like Jamie Oliver’s 15 minute meal only that this will take you about 30 minutes plus prepping.
